Apple Cinnamon Coffee Cake
- 2 cups flour
- 1/2 cup butter
- 1 cup sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 eggs
- 1 cup sour cream
- 1 teaspoon vanilla
- 2 cups apples sliced
- 1/4 cup sugar
- 1 teaspoon cinnamon
PREHEAT OVEN 350º
Directions:
1. In a medium/large mixing bowl: beat eggs slightly ( I used a hand mixer, but you can use a whisk)
add butter, 1 cup sugar…beat until creamy
2. In a small bowl: combine dry ingredients: flour, soda and salt
3. In the original medium/large bowl blend dry mixture into wet, creamed batter.
4. Add vanilla
5. Add sour cream
6. In a small bowl, toss sliced apples in cinnamon and sugar combination
7. Grease and flour a tube pan (you can also use a 13×9 rectangular baking pan)
8.Spread 1/2 of batter in pan, evenly
9. Layer or place coated (1.5 cup or 3/4 of apples) on batter
10. Cover apples with remaining batter
11. Sprinkle top with remaining coated apples
12. Bake for 45 minutes.
