This fun twist on a Thanksgiving favorite is submitted by Jini and Mark Henderson.
Stuffin’ Muffins
- 2 1/2 cups onions
- 2 1/2 cups celery
- 1/2 cup butter
- 2 tsp salt
- 1/2-1 tsp pepper
- 2 eggs
- 3 loaves stuffing bread
- 3 tsp Bell’s Seasoning
Directions:
- Saute onions and celery in butter.
- Wet down and break up the 3 loaves of bread in large pots
- Add 2 eggs, salt, pepper and Bell’s Seasoning to bread
- Add sauteed veggies, and mix by hand.

Place stuffing in muffin tins at 350 degrees, at least 20 minutes depending upon the size of the muffin tins.
